蒟蒻的主要特色,是富含有多醣類高黏稠水溶性纖維素,食用後易有飽足感,但卻只有很少的熱量,可改善高血壓、控制糖尿病、改善便祕以及減肥聖品。
市售的蒟蒻包裝內含有液體,是為了保存蒟蒻的石灰水,而要除去石灰水臭臭的味道,只要記得在烹調蒟蒻之前用熱水燙過,或用鹽巴搓揉後再煮,就比較不會有股怪味道。此外,幼兒及老年人在食用蒟蒻果凍時,要記得細嚼慢嚥。

古書稱農曆新春頭八天分別是不同畜牧和作物的生日。占書云:「歲後八日,正月初一占雉(雞),二日占犬(狗),三日占豕(豬),四日占羊,五日占牛,六日占馬,七日占人,八日占穀。」,故初七稱為人日,亦稱為七元。
